Zucchini Noodle Chicken Alfredo

A delicious and healthy alternative to traditional Alfredo, made with zucchini noodles and chicken.

Ingredients

  • 2 medium zucchinis
  • 1 pound chicken breast
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon Italian seasoning

Instructions

  1. Spiralize the zucchinis to create noodles.
  2. In a large skillet, heat olive oil over medium heat and add minced garlic.
  3. Add the chicken breast and cook until no longer pink.
  4. Stir in heavy cream and bring to a simmer.
  5. Add Parmesan cheese, Italian seasoning, salt, and pepper. Stir until combined.
  6. Add zucchini noodles and toss to coat.
  7. Cook for an additional 2-3 minutes until noodles are tender.
  8. Serve warm.

Notes

  • For added flavor, sprinkle extra Parmesan cheese on top before serving.
