White German Chocolate Cake with Cheesecake Center

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a bowl, mix flour, baking powder, and salt; set aside.
  3. In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla.
  4. Gradually add flour mixture alternating with buttermilk, starting and ending with flour.
  5. Divide the batter between the prepared pans.
  6. In another bowl, beat cream cheese until smooth. Add powdered sugar and vanilla, mixing until creamy.
  7. Spoon cream cheese mixture over one cake layer. Top with the second layer, securing the cheesecake center.
  8. Bake for 30-35 minutes until a toothpick comes out clean. Cool completely.
  9. Frost with whipped cream and sprinkle coconut and pecans on top.

Notes

  • For a richer flavor, let the cake sit overnight in the fridge before serving.
  • Decorate with additional coconut and pecans if desired.
