- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- 1 cup chopped pecans
- Preheat the oven to 350°F (175°C). Grease and flour two round cake pans.
- In a bowl, mix flour, baking powder, and salt; set aside.
- In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla.
- Gradually add flour mixture alternating with buttermilk, starting and ending with flour.
- Divide the batter between the prepared pans.
- In another bowl, beat cream cheese until smooth. Add powdered sugar and vanilla, mixing until creamy.
- Spoon cream cheese mixture over one cake layer. Top with the second layer, securing the cheesecake center.
- Bake for 30-35 minutes until a toothpick comes out clean. Cool completely.
- Frost with whipped cream and sprinkle coconut and pecans on top.
