- 8 ounces penne pasta
- 1 cup fresh spinach, chopped
- 1 cup artichoke hearts, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup Feta cheese, crumbled
- 1/4 cup olives, sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Cook the penne pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine the cooked pasta, spinach, artichoke hearts, cherry tomatoes, red onion, Feta cheese, and olives.
- In a separate bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper.
- Pour the dressing over the pasta salad and toss to coat.
- Chill in the refrigerator for at least 30 minutes before serving.
