Ingredients

  • 8 ounces penne pasta
  • 1 cup fresh spinach, chopped
  • 1 cup artichoke hearts, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup Feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine the cooked pasta, spinach, artichoke hearts, cherry tomatoes, red onion, Feta cheese, and olives.
  3. In a separate bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to coat.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
