Spicy Southwest Salad (with Spicy Ranch Dressing)

A deliciously spicy and tangy salad topped with a homemade spicy ranch dressing that will delight your taste buds.

Ingredients

  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 avocado, diced
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/2 cup shredded cheese, cheddar or pepper jack

Instructions

  1. In a large bowl, combine the romaine lettuce, cherry tomatoes, black beans, corn, avocado, red onion, and cilantro.
  2. Toss together until well mixed.
  3. In a separate bowl, whisk together the ingredients for the spicy ranch dressing.
  4. Drizzle the dressing over the salad and toss to coat.
  5. Top with shredded cheese before serving.
