  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 teaspoon cream of tartar
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, combine pumpkin puree, brown sugar, granulated sugar, and vegetable oil. Mix until smooth.
  3. Add in the eggs and vanilla extract, and mix well.
  4. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, salt, and cream of tartar.
  5. Gradually add the dry ingredients to the wet ingredients until combined. Fold in chocolate chips if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
  8. Let it cool in the pan for 10 minutes before transferring to a wire rack.

Notes

  • For an extra snickerdoodle flavor, sprinkle the top with cinnamon sugar before baking.
