Slow Cooker Street Corn Chicken

A delicious and comforting dish that combines the flavors of street corn with tender chicken, made effortlessly in a slow cooker.

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup corn kernels
  • 1/2 cup diced red onion
  • 1 cup heavy cream
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup grated cotija cheese
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the corn kernels and diced red onion on top of the chicken.
  3. In a bowl, mix the heavy cream, chili powder, cumin, smoked paprika, salt, and black pepper. Pour this mixture over the ingredients in the slow cooker.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  5. Before serving, shred the chicken and mix everything together.
  6. Top with grated cotija cheese and fresh cilantro.

Notes

  • For added flavor, marinate the chicken in spices overnight before cooking.
  • Adjust the level of spiciness by adding more or less chili powder.
