- 2 pounds boneless, skinless chicken breasts
- 1 cup corn kernels
- 1/2 cup diced red onion
- 1 cup heavy cream
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup grated cotija cheese
- 1/4 cup fresh cilantro, chopped
- Place the chicken breasts in the slow cooker.
- Add the corn kernels and diced red onion on top of the chicken.
- In a bowl, mix the heavy cream, chili powder, cumin, smoked paprika, salt, and black pepper. Pour this mixture over the ingredients in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Before serving, shred the chicken and mix everything together.
- Top with grated cotija cheese and fresh cilantro.
