  • 2 pounds beef chuck roast
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes
  • 2 cups sliced bell peppers
  • 1 tablespoon sesame seeds

Instructions

  1. Place the beef chuck roast in the slow cooker.
  2. In a bowl, mix together soy sauce, brown sugar, rice vinegar, garlic, ginger, sesame oil, and red pepper flakes.
  3. Pour the mixture over the beef in the slow cooker.
  4. Cover and cook on low for 6-8 hours or until the beef is tender.
  5. During the last 30 minutes, add the sliced bell peppers to the slow cooker.
  6. Once done, shred the beef with two forks and stir to combine.
  7. Serve topped with sesame seeds.
