- 2 pounds beef chuck roast
- 1 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup rice vinegar
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon sesame oil
- 1 teaspoon red pepper flakes
- 2 cups sliced bell peppers
- 1 tablespoon sesame seeds
- Place the beef chuck roast in the slow cooker.
- In a bowl, mix together soy sauce, brown sugar, rice vinegar, garlic, ginger, sesame oil, and red pepper flakes.
- Pour the mixture over the beef in the slow cooker.
- Cover and cook on low for 6-8 hours or until the beef is tender.
- During the last 30 minutes, add the sliced bell peppers to the slow cooker.
- Once done, shred the beef with two forks and stir to combine.
- Serve topped with sesame seeds.
