Slow Cooker Cowboy Casserole

A hearty and flavorful dish perfect for busy weeknights, packed with turkey bacon and chicken ham.

  • 1 pound ground turkey
  • 6 slices turkey bacon
  • 1 cup diced chicken ham
  • 2 cups frozen mixed vegetables
  • 1 can diced tomatoes
  • 2 cups kidney beans
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Cook the turkey bacon in a skillet over medium heat until crispy, then crumble and set aside.
  2. In the slow cooker, combine ground turkey, chicken ham, mixed vegetables, diced tomatoes, kidney beans, and spices.
  3. Stir in the crumbled turkey bacon.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. Once cooked, serve warm.

Notes

  • For a spicier dish, add diced jalapeños.
  • This recipe can easily be doubled for meal prep.
