Short Rib Ragu

A rich and satisfying ragu perfect for family gatherings.

Ingredients

  • 2 pounds short ribs
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 1 can (14 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season short ribs with salt and pepper, then brown on all sides.
  3. Remove short ribs and add onion, carrots, and celery to the pot, sauté until softened.
  4. Add garlic and cook for an additional minute.
  5. Pour in wine, scraping the bottom of the pot to deglaze.
  6. Add beef broth, diced tomatoes, tomato paste, thyme, and rosemary back into the pot.
  7. Return the short ribs to the pot and bring to a simmer.
  8. Cover and cook on low heat for 2-3 hours until the meat is tender.
  9. Shred the meat, return to sauce, and serve.

Notes

  • Serve with pasta or polenta for a complete meal.
  • Refrigerate any leftovers for up to 3 days.
