Ravenclaw Midnight Blueberry Cheesecake

A delicious and enchanting dessert inspired by Ravenclaw, this midnight blueberry cheesecake is a showstopper for any occasion.

  • 1 cup crushed graham crackers
  • 3 tablespoons sugar
  • 1/2 cup unsalted butter, melted
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2 cups fresh blueberries
  • 1/4 cup lemon juice
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, mix the crushed graham crackers, sugar, and melted butter until well combined.
  3. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese until smooth.
  5. Add sugar and vanilla extract, mixing until well combined.
  6. Mix in the eggs, one at a time, until fully incorporated.
  7. Add fresh blueberries and lemon juice, folding gently to combine.
  8. Pour the cheesecake batter over the crust in the springform pan.
  9. Bake for 50-60 minutes, until the center is set but still slightly jiggly.
  10. Remove from the oven and let cool at room temperature, then refrigerate for at least 4 hours before serving.

Notes

  • For a stiffer cheesecake, add an additional egg.
  • Use a water bath to prevent cracking.
