  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup mini marshmallows
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, brown sugar, granulated sugar, melted butter, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in mini marshmallows and chocolate chips.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until golden brown.
  8. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For added flavor, sprinkle a little sea salt on top of the cookies before baking.
  • These cookies pair wonderfully with a cup of hot cocoa.
