Pumpkin & Mushroom Spaghetti with Crispy Bacon

A delicious pasta dish combining the flavors of pumpkin and mushrooms with crispy turkey bacon.

Ingredients

  • 200 grams spaghetti
  • 150 grams pumpkin, diced
  • 100 grams mushrooms, sliced
  • 2 strips crispy turkey bacon, chopped
  • 2 cloves garlic, minced
  • 50 grams parmesan cheese, grated
  • 2 tablespoons olive oil
  • salt to taste
  • pepper to taste
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Cook spaghetti according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add pumpkin and mushrooms to the skillet, cooking until tender.
  4. Add the cooked spaghetti and crispy turkey bacon, tossing to combine.
  5. Season with salt and pepper.
  6. Serve topped with grated parmesan and garnished with fresh parsley.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • Feel free to add other vegetables like spinach or kale.
