Amazing Pumpkin & Gouda Stuffed Shells With Brown Butter Delight

  • 12 large pasta shells
  • 1 cup pumpkin puree
  • 1 cup Gouda cheese, shredded
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons fresh sage, chopped
  • 4 tablespoons butter
  • 1 cup heavy cream
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine pumpkin puree, Gouda, ricotta, Parmesan, egg, sage, salt, and pepper.
  3. Fill each shell with the pumpkin mixture and arrange in a baking dish.
  4. In a saucepan, melt butter over medium heat and cook until browned.
  5. Add heavy cream and nutmeg to the browned butter, mixing well.
  6. Pour the sauce over the stuffed shells and cover with foil.
  7. Bake for 25 minutes, then remove foil and bake for an additional 10 minutes.
  8. Let cool for a few minutes before serving.

Notes

  • Use fresh sage for the best flavor.
  • Feel free to substitute other cheeses if desired.
