  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 can (15 oz) pumpkin puree
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened.
  2. Add turkey bacon and ground turkey, cooking until browned.
  3. Stir in pumpkin puree, black beans, diced tomatoes, and vegetable broth.
  4. Add chili powder, cumin, smoked paprika, salt, and pepper. Stir well.
  5. Bring to a boil, then reduce heat and let simmer for 30 minutes, stirring occasionally.
  6. Serve hot, garnished with your choice of toppings.

Notes

  • For an added kick, include some chopped jalapeños or hot sauce.
