  • 4 pieces chicken thighs
  • 2 cups jasmine rice
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1/2 cup green sauce (such as cilantro sauce)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Season the chicken thighs with cumin, paprika, salt, and pepper, then add to the pot.
  4. Brown the chicken on both sides, about 5 minutes each.
  5. Add the rice and stir to coat.
  6. Pour in the chicken broth and bring to a boil.
  7. Reduce to a simmer, cover, and let cook for about 20 minutes or until the rice is tender and has absorbed the liquid.
  8. Serve with green sauce drizzled on top.

Notes

  • For added flavor, marinate the chicken in the spices for a few hours before cooking.
  • Feel free to add vegetables to the rice, such as peas or peppers.
