Perfect Mexican Street Corn Pasta Salad

A delightful pasta salad that combines the flavors of Mexican street corn with a twist of turkey bacon.

Ingredients

  • 8 ounces pasta
  • 1 cup corn kernels
  • 4 slices turkey bacon
  • 1/2 cup diced red onion
  • 1/2 cup chopped cilantro
  • 1/2 cup feta cheese
  • 1 avocado, diced
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy. Remove and chop.
  3. In a large bowl, combine cooked pasta, corn, red onion, cilantro, feta cheese, and avocado.
  4. Add chopped turkey bacon to the mixture.
  5. In a separate bowl, mix together mayonnaise, lime juice, chili powder, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a vegetarian option, omit the turkey bacon and add extra beans.
