A delicious and vibrant pasta salad that combines the flavors of Mexican street corn with the crunch of turkey bacon.

  • 1 pound pasta (elbow or similar)
  • 2 cups corn (grilled or canned)
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup red onion (diced)
  • 1/2 cup cilantro (chopped)
  • 1 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions; drain and cool.
  2. In a skillet, cook the turkey bacon until crispy; crumble when cool.
  3. In a large bowl, mix the cooled pasta, corn, turkey bacon, cherry tomatoes, red onion, and cilantro.
  4. In a separate bowl, combine mayonnaise, lime juice, chili powder, salt, and pepper.
  5. Pour the dressing over the pasta mixture and toss until well combined.
  6. Chill for at least 30 minutes before serving.
