One-Pot Philly Cheesesteak Soup with Bacon and Cheesy Toast

A delicious and hearty soup made with turkey bacon and served with cheesy toast for a satisfying meal.

Ingredients

  • 4 cups beef broth
  • 1 pound turkey bacon, chopped
  • 1 large onion, diced
  • 2 bell peppers, diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/4 cup cornstarch
  • 1 cup heavy cream
  • 8 ounces provolone cheese, shredded
  • 4 slices of bread for toasting

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and set aside.
  2. Add onion, bell peppers, and garlic to the pot. Sauté until softened.
  3. Pour in beef broth and bring to a boil.
  4. Whisk together cornstarch and heavy cream, then stir into the soup.
  5. Add the cooked bacon and cheese, stirring until melted.
  6. Season with salt, pepper, and Italian seasoning.
  7. Serve with toasted bread topped with cheese.

Notes

  • For added flavor, you can use a blend of different cheeses.
  • Store leftovers in an airtight container in the fridge.
