One Pot Fall Vegetable Orzo and Chickpeas Recipe

A warm and comforting dish perfect for fall.

Ingredients

  • 1 cup orzo pasta
  • 1 can chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 1 cup diced butternut squash
  • 1 cup chopped kale
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onion and garlic, sauté until translucent.
  3. Add the butternut squash and cook for about 5 minutes.
  4. Stir in the orzo, chickpeas, vegetable broth, thyme, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer until orzo is cooked and squash is tender.
  6. Stir in the kale and cook until wilted.
  7. Serve warm.

Notes

  • This dish can be made ahead of time and reheated.
  • Feel free to add other seasonal vegetables.
