  • 4 ears corn, husked and kernels removed
  • 4 slices turkey bacon, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add olive oil and onion, sauté until soft.
  3. Add garlic and corn; cook for an additional 2 minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat and stir in the heavy cream and chili powder.
  6. Season with salt and pepper. Simmer for 10 minutes.
  7. Blend the soup until smooth using an immersion blender.
  8. Serve hot, garnished with crispy bacon and fresh cilantro.
