Korean BBQ Meatballs with Roasted Vegetables

Korean BBQ Meatballs are a deliciously juicy option for your next meal, paired perfectly with roasted vegetables.

Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons minced garlic
  • 2 teaspoons grated ginger
  • 1/4 cup green onions, chopped
  • 1 pound assorted vegetables (bell peppers, zucchini, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the ground beef, breadcrumbs, soy sauce, sesame oil, garlic, ginger, and green onions.
  3. Form the mixture into meatballs, about 1 inch in diameter.
  4. Place on a baking sheet and bake for 15-20 minutes until cooked through.
  5. Meanwhile, chop the vegetables and toss them with olive oil, salt, and pepper.
  6. Add the vegetables to a separate baking sheet and roast in the oven for the last 15 minutes of the meatballs’ cooking time.
  7. Serve the meatballs hot alongside the roasted vegetables.

Notes

  • For extra flavor, marinate the meatballs for 30 minutes before baking.
  • Adjust the vegetables according to your preference.
