- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 2 teaspoons minced garlic
- 2 teaspoons grated ginger
- 1/4 cup green onions, chopped
- 1 pound assorted vegetables (bell peppers, zucchini, carrots)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Preheat your oven to 400°F (200°C).
- In a bowl, mix the ground beef, breadcrumbs, soy sauce, sesame oil, garlic, ginger, and green onions.
- Form the mixture into meatballs, about 1 inch in diameter.
- Place on a baking sheet and bake for 15-20 minutes until cooked through.
- Meanwhile, chop the vegetables and toss them with olive oil, salt, and pepper.
- Add the vegetables to a separate baking sheet and roast in the oven for the last 15 minutes of the meatballs’ cooking time.
- Serve the meatballs hot alongside the roasted vegetables.
