Honey Lime Chicken & Avocado Rice Stack

  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lime juice
  • 1/4 cup honey
  • 2 cups cooked jasmine rice
  • 1 ripe avocado, diced
  • 1/4 cup chopped cilantro
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a bowl, mix lime juice and honey. Marinate the chicken breasts in the mixture for at least 30 minutes.
  2. Grill the chicken over medium-high heat for about 6-7 minutes on each side or until cooked through.
  3. While the chicken is cooking, prepare the rice and mix in diced avocado and chopped cilantro.
  4. Once the chicken is cooked, slice it and layer it over the avocado rice.
  5. Season with salt and pepper to taste.
  6. Serve immediately and enjoy!

Notes

  • For extra flavor, add chopped jalapeños to the avocado rice.
