  • 1 cup black beans
  • 1 cup shredded cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. In a large skillet, cook the chicken thighs over medium heat until browned.
  2. Add the rice, BBQ sauce, chicken broth, garlic powder, onion powder, salt, and pepper.
  3. Stir to combine, then bring to a simmer.
  4. Cover and cook for 20 minutes.
  5. After 20 minutes, stir in the corn and black beans.
  6. Top with shredded cheese, cover, and let sit until cheese is melted.
