Ingredients

  • 2 cups rice
  • 1 pound chicken thighs
  • 1 cup BBQ sauce
  • 2 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon pepper
  • 1 cup corn
  • 1/2 cup chopped green onions

Instructions

  1. In a large pan, heat oil over medium heat.
  2. Season chicken thighs with garlic powder, onion powder, and pepper.
  3. Add chicken to the pan and cook until browned, about 5 minutes each side.
  4. Remove chicken from the pan and set aside.
  5. Add rice to the pan and toast for 1-2 minutes.
  6. Add chicken broth and return chicken to the pan.
  7. Pour BBQ sauce over chicken and bring to a simmer.
  8. Cover and cook on low for 25-30 minutes until rice is cooked through.
  9. Stir in corn and green onions before serving.

Notes

  • For extra flavor, marinate the chicken in BBQ sauce for an hour before cooking.
  • You can substitute brown rice for white rice if desired.
