- 4 slices turkey bacon
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cans diced tomatoes
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- 1 cup cooked white beans
- 1/2 cup heavy cream
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot, add olive oil, onion, and garlic. Sauté until the onion is translucent.
- Add diced tomatoes, chicken broth, and Italian seasoning. Bring to a boil.
- Lower the heat and stir in the cooked white beans and heavy cream.
- Simmer for 10 minutes, then blend until smooth if desired.
- Top with crumbled turkey bacon before serving.
Notes
