High Protein Chicken Parmesan Casserole

A delicious and protein-packed twist on a classic chicken parmesan casserole that the whole family will love.

  • 1 pound chicken breast, cooked and shredded
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked quinoa or brown rice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, marinara sauce, ricotta cheese, Italian seasoning, garlic powder, salt, pepper, and quinoa or rice.
  3. Spread the mixture in a greased baking dish.
  4. Top with mozzarella and parmesan cheese.
  5. Bake for 25-30 minutes, until the cheese is bubbly and slightly golden.

Notes

  • For extra flavor, add chopped fresh basil or parsley on top before serving.
  • This casserole can be prepared ahead of time and refrigerated until ready to bake.
