  • 1 pound sweet potatoes
  • 1 pound Brussels sprouts

  • 1 teaspoon garlic powder
  • 1 teaspoon salt

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the carrots and sweet potatoes, then cut them into bite-sized pieces.
  3. Trim the ends of the Brussels sprouts and cut them in half.
  4. In a large bowl, combine all the vegetables.
  5. Drizzle with olive oil and sprinkle the garlic powder, salt, and pepper. Toss to coat evenly.
