- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 lemon, juiced and zested
- 2 tablespoons olive oil
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, parsley, oregano, salt, and pepper. Mix well and form into meatballs.
- Heat olive oil in a skillet over medium heat. Cook meatballs until browned on all sides.
- In a separate pot, bring chicken broth to a boil. Add orzo and cook until al dente, about 8-10 minutes.
- Drain orzo and mix with cooked meatballs.
- Stir in lemon juice and zest before serving.
