  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, parsley, oregano, salt, and pepper. Mix well and form into meatballs.
  2. Heat olive oil in a skillet over medium heat. Cook meatballs until browned on all sides.
  3. In a separate pot, bring chicken broth to a boil. Add orzo and cook until al dente, about 8-10 minutes.
  4. Drain orzo and mix with cooked meatballs.
  5. Stir in lemon juice and zest before serving.

Notes

  • For extra flavor, serve with a side of tzatziki sauce.
  • These meatballs can also be baked in the oven at 400°F for 20 minutes.
