GARLIC HERB CHICKEN WITH MASHED POTATOES AND GLAZED CARROTS

Delicious garlic herb chicken served with creamy mashed potatoes and sweet glazed carrots.

  • 4 pieces chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 pound carrots, sliced
  • 1/4 cup brown sugar
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Coat chicken thighs with the mixture.
  3. Place chicken in a baking dish and bake for 35-40 minutes, or until cooked through.
  4. Meanwhile, boil potatoes in salted water until tender, about 15-20 minutes. Drain and mash with milk and butter until smooth.
  5. In a skillet, melt butter and add carrots. Stir in brown sugar and cook until carrots are glazed and tender, about 10 minutes.
  6. Serve the chicken alongside mashed potatoes and glazed carrots.

Notes

  • For extra flavor, marinate the chicken for a few hours before cooking.
  • This dish is great for meal prep and can be stored for up to 3 days in the refrigerator.
