French Onion Beef Short Rib Soup

  • 2 pounds beef short ribs
  • 4 cups beef broth
  • 2 tablespoons olive oil
  • 4 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme
  • 1 cup dry red wine
  • 1 tablespoon balsamic vinegar
  • 4 slices of crusty bread
  • 1 cup Gruyère cheese, shredded

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a heavy pot, heat olive oil over medium heat and brown the short ribs on all sides.
  3. Remove the ribs and sauté onions until caramelized.
  4. Add garlic and thyme, then stir in the wine and vinegar.
  5. Return short ribs to the pot with beef broth.
  6. Cover and transfer to the oven, cooking for 2 hours or until tender.
  7. Remove from oven, top with bread and cheese, and broil until golden brown.
