Fast and Easy Vegan Carbonara

Ingredients

  • 12 ounces spaghetti
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup cashew cream
  • 1/4 cup nutritional yeast
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the spaghetti according to package instructions until al dente.
  2. In a large pan, heat olive oil over medium heat. Add the diced onion and sauté until translucent.
  3. Add minced garlic and cook for another minute.
  4. Stir in the cashew cream, nutritional yeast, smoked paprika, salt, and pepper. Mix well and heat through.
  5. Toss the cooked spaghetti in the sauce until well coated.
  6. Serve hot, garnished with fresh parsley.
