  • 1 cup cooked bacon, chopped
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/4 cup all-purpose flour
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Grate the potatoes and soak them in cold water for 30 minutes.
  3. Drain and dry the potatoes, then mix with salt, pepper, and garlic powder.
  4. Spread the potatoes in a single layer on a baking sheet and bake for 25 minutes, turning halfway through.
  5. In a saucepan, melt the butter over medium heat, then whisk in the flour to create a roux.
  6. Slowly add the heavy cream while whisking to prevent lumps, then add in the cooked bacon.
  7. Fry the eggs in a skillet, cooking to your preferred doneness.
