  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the softened cream cheese and sugar until smooth.
  4. Add the vanilla extract and eggs, one at a time, mixing until just combined.
  5. In a separate bowl, combine the pumpkin puree, cinnamon, nutmeg, ginger, and salt.
  6. Pour half of the cream cheese mixture over the crust, then add half of the pumpkin mixture. Repeat with the remaining mixtures, swirling with a knife for a marbled effect.
  7. Bake for 50-60 minutes, or until the center is set. Allow to cool before refrigerating for at least 4 hours or overnight.
