Easy Low Carb Chicken Casserole

A delicious and easy low carb chicken casserole featuring turkey bacon and fresh veggies.

Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup turkey bacon, chopped
  • 1 cup broccoli florets
  • 1 cup bell peppers, diced
  • 1 cup cheddar cheese, shredded
  • 1/2 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, turkey bacon, broccoli, bell peppers, and half of the cheese.
  3. In a separate bowl, whisk together the heavy cream, garlic powder, onion powder, salt, and pepper.
  4. Pour the cream mixture over the chicken and vegetable mixture, and stir to combine.
  5. Transfer the mixture to a greased baking dish and top with the remaining cheese.
  6. Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
  7. Allow to cool for a few minutes before serving.

Notes

  • For extra flavor, add your favorite herbs such as thyme or rosemary.
  • This casserole can be made ahead of time and stored in the refrigerator.
