Easy Balsamic Chicken & Veggie Orzo

A simple yet flavorful dish that combines balsamic chicken with nutritious veggies and orzo for a delightful meal.

  • 2 cups cooked orzo
  • 1 pound boneless, skinless chicken breasts
  • 1 cup cherry tomatoes
  • 1 cup zucchini, diced
  • 1 cup bell peppers, diced
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  2. Add the chicken breasts and cook until browned and cooked through, about 6-7 minutes per side.
  3. Remove the chicken and let it rest, then slice it.
  4. Add zucchini and bell peppers to the skillet and sauté for 4-5 minutes.
  5. Stir in cherry tomatoes and balsamic vinegar, cooking for another 2 minutes.
  6. Add the cooked orzo and sliced chicken to the skillet, stirring to combine.
  7. Season with salt and pepper to taste, then serve hot.

Notes

  • For extra flavor, marinate the chicken in balsamic vinegar for 30 minutes before cooking.
  • You can substitute orzo with any pasta of your choice.
