  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 2 cloves garlic, minced
  • 2 cups spinach, fresh
  • 1 cup diced tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. In a slow cooker, add the chicken breasts and pour in the chicken broth.
  2. Add the heavy cream, Parmesan cheese, Italian seasoning, garlic, diced tomatoes, salt, and pepper.
  3. Cook on low for 6 to 8 hours, or on high for 3 to 4 hours.
  4. During the last 30 minutes of cooking, stir in the fresh spinach.
  5. Once cooked, shred the chicken in the soup using two forks and mix well.
