Crock Pot Crack Potato Soup

A creamy and comforting potato soup made in a slow cooker, topped with turkey bacon for extra flavor!

Ingredients

  • 2 pounds potatoes, diced
  • 4 cups chicken broth
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 cup turkey bacon, cooked and crumbled
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. In the slow cooker, combine the potatoes, chicken broth, onion, garlic, salt, and pepper.
  2. Cook on low for 6-8 hours or until potatoes are tender.
  3. About 30 minutes before serving, add cream cheese and stir until melted.
  4. Stir in sour cream and cheddar cheese until well combined.
  5. Top with crumbled turkey bacon before serving.

Notes

  • For a thicker soup, mash some of the potatoes before serving.
  • Feel free to add additional toppings such as green onions or more cheese.
