  • 4 medium zucchinis
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, diced
  • 4 slices turkey bacon, cooked and chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the insides to create boats.
  3. In a bowl, mix ricotta cheese, spinach, mushrooms, turkey bacon, garlic powder, salt, and pepper.
  4. Stuff the zucchini boats with the ricotta mixture.
  5. Drizzle olive oil over the stuffed zucchinis.
  6. Sprinkle mozzarella cheese on top.
  7. Place on a baking sheet and bake for 25-30 minutes until the zucchinis are tender and the cheese is golden.
