  • 1 cup ricotta cheese
  • 1 cup pumpkin puree
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese
  • 2 cups marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta shells according to package instructions until al dente, then drain and set aside.
  3. In a mixing bowl, combine the ricotta cheese, pumpkin puree, Parmesan cheese, garlic powder, onion powder, thyme, salt, and pepper.
  4. Carefully stuff each pasta shell with the pumpkin ricotta filling.
  5. Spread half of the marinara sauce in the bottom of a baking dish.
  6. Place the stuffed shells in the baking dish, then cover with the remaining marinara sauce.
  7. Sprinkle the shredded mozzarella cheese on top.
  8. Bake uncovered for 25-30 minutes until heated through and cheese is bubbly.
