  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, fresh
  • Salt and pepper to taste

Instructions

  1. Cook the rigatoni according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent.
  3. Add the minced garlic and Italian sausage, cooking until the sausage is browned.
  4. Stir in the heavy cream and bring to a simmer.
  5. Add the cooked rigatoni, spinach, and Parmesan cheese. Stir well to combine.
  6. Season with salt and pepper to taste, and cook until heated through.
