Creamy Chicken and Rice Soup

Ingredients

  • 1 pound boneless chicken breasts
  • 1 cup white rice
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and garlic, sauté until soft.
  2. Add chicken broth and boneless chicken breasts, bring to a boil.
  3. Reduce heat and simmer until chicken is cooked through. Remove chicken and shred it.
  4. Return shredded chicken to the pot. Stir in rice, salt, pepper, and thyme.
  5. Simmer until rice is cooked, about 15-20 minutes.
  6. Stir in heavy cream and heat through before serving.

  • This soup can be made ahead of time and refrigerated.
