This Coffee Cheesecake combines the rich flavors of coffee with the creamy texture of cheesecake, making it the perfect blend of breakfast and dessert.

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup powdered sugar
  • 1/4 cup brewed coffee, cooled
  • 3 tablespoons coffee liqueur (optional)
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 2 tablespoons cocoa powder

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese until smooth. Add the powdered sugar, coffee, coffee liqueur (if using), and vanilla extract. Mix until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Carefully fold in the sour cream and cocoa powder.
  5. Pour the cheesecake batter over the crust in the springform pan.
  6. Bake for 55-60 minutes or until the center is set but still slightly jiggly.
  7. Allow cooling before refrigerating for at least 4 hours, preferably overnight.
  8. Serve chilled, and enjoy!

Notes

  • For an extra coffee flavor, add espresso powder to the batter.
  • Top with whipped cream and chocolate shavings for garnish.
