- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 3 packages (8 ounces each) cream cheese, softened
- 1 cup powdered sugar
- 1/4 cup brewed coffee, cooled
- 3 tablespoons coffee liqueur (optional)
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 2 tablespoons cocoa powder
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a springform pan.
- In a large bowl, beat the cream cheese until smooth. Add the powdered sugar, coffee, coffee liqueur (if using), and vanilla extract. Mix until well combined.
- Add the eggs one at a time, mixing well after each addition. Carefully fold in the sour cream and cocoa powder.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set but still slightly jiggly.
- Allow cooling before refrigerating for at least 4 hours, preferably overnight.
- Serve chilled, and enjoy!

- For an extra coffee flavor, add espresso powder to the batter.
