3 ripe bananas
1/3 cup melted butter
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
2 teaspoons ground cinnamon
Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, mash the ripe bananas with a fork until smooth.
Mix in the melted butter.
Stir in the baking soda and salt.
Add the sugar, egg, and vanilla extract, mixing until well combined.
Finally, mix in the flour until just incorporated.
In a small bowl, combine sugar and cinnamon for the swirl.
Pour half of the batter into a greased loaf pan, sprinkle with half the cinnamon sugar, then top with the remaining batter and sprinkle the rest of the cinnamon sugar on top.
Bake for 60-65 minutes, or until a toothpick comes out clean.
Allow to cool before slicing and serving.
Notes
For an extra twist, try adding nuts or chocolate chips into the batter.
Make sure the bananas are very ripe for the best flavor.
