Chicken Avocado Melt Sandwich

A satisfying blend of grilled chicken, creamy avocado, and melted cheese served on toasted bread.

Ingredients

  • 2 slices of bread
  • 1 grilled chicken breast, sliced
  • 1 ripe avocado, mashed
  • 2 slices of cheese (cheddar or mozzarella)
  • 1 tablespoon mayonnaise
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Spread mayonnaise on one side of each slice of bread.
  3. On the unbuttered side of one slice, layer grilled chicken, mashed avocado, and cheese.
  4. Top with the other slice of bread, mayonnaise side up.
  5. Place in the skillet and cook until golden brown, about 3-4 minutes.
  6. Flip and cook the other side until melted and golden, about 3-4 minutes.
  7. Remove from skillet, cut in half, and serve warm.

Notes

  • This sandwich can easily be customized with different types of cheese.
  • For added flavor, consider including sliced tomatoes or red onion.
