Beef Chile Colorado

  • 2 pounds beef chuck, cut into chunks
  • 4 dried ancho chilies
  • 2 dried guajillo chilies
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 4 cups beef broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Toast the dried chilies in a dry skillet over medium heat until fragrant, then soak in hot water for 20 minutes.
  2. In a blender, blend the soaked chilies with some of the soaking water until smooth.
  3. In a large pot, heat the vegetable oil over medium-high heat and brown the beef chunks.
  4. Add the chopped onion and minced garlic, sauté until the onion is translucent.
  5. Stir in the chili paste, ground cumin, and ground coriander.
  6. Add the beef broth, bring to a boil, then reduce heat and simmer until the beef is tender, about 2 hours.
