BBQ Chicken Sweet Potato Bowl: Easy, Flavor-Packed Meal

A delicious blend of BBQ chicken and sweet potatoes.

Ingredients

  • 2 sweet potatoes
  • 1 pound chicken breast
  • 1 cup BBQ sauce
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup chopped green onions
  • 1 avocado, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss with olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25 minutes.
  4. Meanwhile, cook the chicken breast in a skillet until fully cooked, then shred it.
  5. Mix the shredded chicken with the BBQ sauce.
  6. Once the sweet potatoes are done, assemble the bowl with sweet potatoes, BBQ chicken, green onions, and sliced avocado.

Notes

  • For added flavor, marinate the chicken in BBQ sauce overnight.
