- 2 medium sweet potatoes
- 1 pound cooked shredded chicken
- 1 cup BBQ sauce
- 1 cup corn
- 1 cup black beans
- 1 cup diced red bell pepper
- 1/4 cup chopped green onions
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Preheat the oven to 400°F (200°C).
- Wash and poke holes in the sweet potatoes, then place them on a baking sheet and bake for 45-60 minutes until tender.
- In a pan, heat the olive oil over medium heat, add the red bell pepper and sauté until soft.
- Add the cooked chicken, BBQ sauce, corn, black beans, garlic powder, salt, and pepper. Stir well and cook until heated through.
- Once the sweet potatoes are cooked, cut them in half and fluff the insides with a fork.
- Top each sweet potato half with the chicken mixture and garnish with green onions.
