  • 1 pound sausage (Italian or your preference)
  • 1 small butternut squash, peeled and diced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the sausage and cook until browned, breaking it apart as it cooks.
  4. Add the butternut squash and cook for about 5-7 minutes until tender.
  5. Stir in garlic, thyme, and red pepper flakes. Cook for an additional 2 minutes.
