  • 1 cup apple cider
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, boil the apple cider until reduced by half.
  3. In a bowl, mix flour, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, cream the butter and brown sugar together until fluffy.
  5. Beat in the egg and vanilla, then add the reduced apple cider.
  6. Gradually mix the dry ingredients into the wet ingredients.
  7. Scoop dough onto a lined baking sheet and bake for 10-12 minutes.
  8. Let cool on the wire rack.

Notes

  • For a sweeter cookie, add more brown sugar.
  • Store in an airtight container for up to one week.
