- 1 cup apple cider
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- Preheat your oven to 350°F (175°C).
- In a saucepan, boil the apple cider until reduced by half.
- In a bowl, mix flour, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, cream the butter and brown sugar together until fluffy.
- Beat in the egg and vanilla, then add the reduced apple cider.
- Gradually mix the dry ingredients into the wet ingredients.
- Scoop dough onto a lined baking sheet and bake for 10-12 minutes.
- Let cool on the wire rack.
